I was a little wary of the cottage cheese ice cream trend but I am sold after making this berry chip cottage cheese ice cream.

The ice cream doesn’t taste “cheese-y” and has the same scoopability as regular ice cream. Make sure to read the freezing note for tips on freezing.
What you’ll need and variations
Cottage cheese ice cream only requires 5 ingredients.

Cottage Cheese
Who would have ever thought cottage cheese could be ice cream?! I’ve added cottage cheese to smoothies so it’s not too much of a jump to have it as your ice cream.
For this recipe, I used whole milk cottage cheese so it will have higher fat content which adds to the creaminess of the ice cream. Alternatively, try using 1% or 2% fat cottage cheese. Adjusting the fat may make the cottage less creamy but I don’t think it would be a huge difference.
Cottage cheese has less lactose than a cup of milk making it a good option for people with lactose intolerance. If you want to skip the lactose entirely choose a lactose free cottage cheese. This recipe probably wouldn’t work well with vegan cottage cheese.
Raspberries and Strawberries
This ice cream is also going to have some fiber added thanks to the raspberries. A cup of raspberries has 8 grams of fiber.
I only used a couple of strawberries (because that’s all I had) but you could add more. Strawberries bring in a little extra sweetness.
Try swapping the raspberries/strawberries for blueberries.
If you try using blackberries you may want to blend them separately and put them through a sieve before adding them to the cottage cheese. This will help remove any little seeds.
Honey
I used manuka honey for this recipe and it really added a deeper flavor to this recipe although you could use any honey you have.
You could also use another type of sweetener such as maple syrup or date syrup. I would stick with a liquid sweetener so that it’s better incorporated throughout your ice cream.
Chocolate Chips
Chocolate and raspberries have to be one of the best flavor combos around. They pair so well together.
Using semi-sweet chocolate plays off the tartness of the raspberries but you could use any type of chocolate. Mini chocolate chips would also work well.
How to make
This recipe comes together pretty quickly and the only piece of equipment that you need is a blender.

Blend
The only prep you need to do before blending is washing the berries and then slicing the strawberries. You could easily add in more raspberries or strawberries for a stronger berry flavor.
I used this blender to make the ice cream. It works well, just louder than I like.
Freeze
Your ice cream will be ready after 5 hours and will be at the perfect texture to scoop.
Freezing note: If you let it freeze longer than 5 hours or overnight the ice cream will be rock solid. If that happens let your ice cream soften for an hour in the fridge.
