I wasn’t going to post this recipe. I thought, is this recipe too simple? Not exciting?
Pancakes can call for a lot of ingredients and oftentimes there are quite a few ingredients and there are a lot of people that can’t have milk or eggs or more than likely they can’t have flour.
There are quite a few recipes out there that are vegan or gluten-free but very few that don’t call for flour whether it be a gluten-free flour or not. That was how the 2 ingredient sweet potato pancake was born.
The two superstar ingredients in this pancake are sweet potato and flax!
Prep The Sweet Potato
Just take one sweet potato, wash it, poke a few holes in it with a fork and then pop it in the microwave for a couple minutes until cooked through!
Prep The Flax Egg
Flax makes a wonderful egg substitute. Technically making a flax egg calls for an additional ingredient, water, but I’m counting water as a freebie.
All you have to do to make the flax egg is whisk together ground flax with water then let it sit for a few minutes. If you have never made a flax egg use Detoxinista’s flax egg recipe, it is super easy.
Tip:
I used Manitoba’s ground flax for the egg. Their flax is the smoothest I have seen and works beautifully in any recipe. Manitoba did send me a bag of flax for this recipe.
Make the Sweet Potato Pancake
Mix the sweet potato with the flax egg and now you have your batter. I made small silver dollar type pancakes by taking a tablespoon of the batter and placing it on a hot pan with some oil. I used coconut oil for these pancakes.
Cook the pancakes until they are golden brown on both sides and you’re done! These cook very fast.
I used one sweet potato for one flax egg. The batter will resemble a bit like mashed potato. You can add a little sweetener to the batter like brown sugar or top it with some honey and berries.
These Make A Great On The Go Breakfast
I packed these sweet potato pancakes in a jar and I was good to go! Top these pancakes with some nuts or a little almond butter with some sliced fruit for an even yummier breakfast!
